Curry Goat

- 3k goat meat, cleaned with a water/vinegar or water/lemon or lime mixture. shopping list
- 1 to 2 onions , chopped shopping list
- 2 to 10 scotch bonnet pepper chopped finely (with a hand blender, blend peppers in a teaspoon of olive oil, a teaspoon of vinegar, and a 1 1/2 cloves of garlic) add to marinade. shopping list

- All purpose seasoning--to taste (purchase or use recipe below) shopping list
- 7 to 10 Dried all spice berries or pimento shopping list
- 2/3 heaped tablespoons of curry powder (For those in the UK I use Beta Pak) enough to color the meat nicely. shopping list
- 1 1/2 tbs Premixed Jamaican Jerk seasoning (wet) in a jar shopping list
- Maggi Liquid seasoning (to taste) shopping list
- 6 to 7 cloves of crushed garlic (garlic tenderizes the meat) shopping list
- 7 to 8 whole cloves shopping list
- 2 scallions chopped finaly or chopped in half and bruised shopping list
- 6 to 12 springs of thyme (Fresh is always better) shopping list
- 5 tbs oil shopping list
- 1 piece of ginger approx length or thumb or less (add this seasoning to taste) shopping list
- 1 carrot, chopped (optional) shopping list
- 1/2 potato, diced (optional) shopping list
- 1/2 can coconut milk (optional) shopping list

- 1 teaspoon dried leaf basil, crumbled shopping list
- 1 teaspoon ground mace shopping list
- 1 teaspoon dried marjoram shopping list

- 1 teaspoon dried leaf thyme, crumbled shopping list
- 1 teaspoon ground nutmeg shopping list
- 1 teaspoon leaf oregano, crumbled shopping list
- 1 teaspoon black pepper shopping list
- 1 teaspoon dried parsley flakes shopping list
- 1/2 teaspoon ground cayenne pepper shopping list
- 1 teaspoon savory shopping list
How to make it
- You will need enough goat meat for 3-4 people. Like i said i dont measure anything. So say I buy 3 kg or a little more. Buy a lot of meat because it is very fatty and will cook down. Buy a mixture of boney and meaty pieces. Have the butcher cut it up small. If you have too many meaty pieces the meat will become tough or really stringy as this takes 2 hrs to cook properly and the bone helps to keep it tender
- Wash and drain meat. Mix all the dry powdered seasoning and the 2 tbs of oil onto the meat. I dont use salt because the powdered seasoning already contain enough salt. Add the fresh seasoning and onions, peppers, and scallions. combine in a bowl and massage the meat until well coated. Cover and refrigerate 24- 36 hours.
- Remove from fridge allow to return to room temperature.
- Remove fresh herbs, seasoning and vegetables (discard scallions). Set aside.
- Heat 2-3 Tbs of oil in a large dutch oven on medium-high. Add 1/2 tbs of curry powder to the oil. This will start to fry. Brown the meat. Return the fresh herbs (not the vegetables) to pot. Stir and leave for 5 mins to cook. Add just enough hot water to cover the meat and 1 very bruised ginger.
- Reduce heat and simmer and for 45 min. to 1hr.
- After an hour add water if necessary. At this point you return the vegetables to the pot and add one finely chopped carrot or half a diced potato (optional).
- Cook for another hour.
- By this time the meat should be tender and falling off the bone. Add salt to taste.
- Also half a can of coconut milk is also optional at the end. If so cook for another 10 minutes.
