How to make it

  • Boil squash, zucchini, and onion until tender. Drain well. Put in a medium size bowl.
  • Add carrots.
  • Mix together sour cream and soup. Add to drained squash. Mix well.
  • Melt butter and mix into dry stuffing.
  • Put 1/4 of stuffing on bottom of casserole dish, pour squash on top and sprinkle with the rest of stuffing.
  • Bake in preheated 350 degree oven for 20-25 minutes.
  • Can prepare ahead and keep in the frig until ready to bake.
