Zucchini and Squash Casserole

- 6 small zucchini (slice into 1/2 inch pieces) shopping list
- 6 small yellow squash (slice into 1/2 inch pieces) shopping list
- 1 medium onion, chopped shopping list
- 1 medium carrot, grated shopping list
- 1 pint sour cream shopping list
- 1 can cream of mushroom or cream of chicken soup shopping list
- 8 oz. pkg. Peppridge Farm Stuffing Mix shopping list
- 1/2 stick butter shopping list
- garlic powder, salt and pepper to your taste shopping list
How to make it
- Boil squash, zucchini, and onion until tender. Drain well. Put in a medium size bowl.
- Add carrots.
- Mix together sour cream and soup. Add to drained squash. Mix well.
- Melt butter and mix into dry stuffing.
- Put 1/4 of stuffing on bottom of casserole dish, pour squash on top and sprinkle with the rest of stuffing.
- Bake in preheated 350 degree oven for 20-25 minutes.
- Can prepare ahead and keep in the frig until ready to bake.
