Beef Tenderloin with lemon butter

- 2 beef tenderloins (filet mignon) steaks (6 oz each) shopping list
- 1/4 tsp. salt, divided shopping list
- 1/8 tsp black pepper shopping list
- 1/8 tsp.garlic powder shopping list
- 1TBSP. finely minced parsley shopping list
- 3/4 tsp. grated lemon peel shopping list
- 1/8 to 1/4 tsp. dried tarragon, crushed shopping list
- 3 TBSP. butter, softened, (divided) shopping list
- 1TBSP. canola oil shopping list
- 2 lemon wedges shopping list
How to make it
- Sprinkle both sides of beef with 1/8 tsp. salt, pepper, & garlic powder
- Set aside for about 15 minutes
- Meanwhile, in small bowl, combine parsley, lemon peel,
- tarragon & 2 TBSP. butter
- Stir until well blended; set aside
- In medium skillet over medium-high heat,
- melt remaining 1 TBSP. butter & oil until bubbly
- Add beef; cook 2 min. on each side.
- Reduce heat to medium; cook 3 min. more on each side or
- until desired doneness.
- To serve, top steaks with equal of lemon butter mixture
- Allow butter mixture to melt over steaks before serving
