Easter Cupcakes

- Cupcakes shopping list
- 150g unsalted butter shopping list
- 1 1/2 cups sugar shopping list
- 2 eggs shopping list
- 2tsp vanilla essence shopping list
- 2 1/2 cups self-raising flour shopping list
- 1 1/4 cups milk shopping list
- coconut frosting shopping list
- 250g spreadable cream cheese shopping list
- 3 tbsp unsalted butter, softened shopping list
- 1/3 cup icing sugar shopping list
- 3 tbsp coconut cream shopping list
- 1 cup shredded coconut, toasted shopping list
- Mini Easter eggs shopping list
How to make it
- 1. In a bowl beat butter and sugar and cream together. Add eggs and mix well.
- 2. add the vanilla, flour and milk. Beat until smooth.
- 3. place individual paper baking cups in a muffin tray, pour in mixture until they are about 2/3 full
- 4. back in oven at 190c for 20 minutes or until golden. While cupcakes are cooling, prepare frosting
- Frosting
- Beat together cream cheese and butter with an electric mixer. add icing sugar and coconut cream then gently mix until combined. Beat on high for 2 minutes until light and fluffy.
- Toast coconut, under the grill for about 5 minutes, until golden.
- put frosting on the tops of cooled cupcakes. Sprinkle with toasted coconut, then place mini Easter eggs on top
