How to make it

  • 1. In a bowl beat butter and sugar and cream together. Add eggs and mix well.
  • 2. add the vanilla, flour and milk. Beat until smooth.
  • 3. place individual paper baking cups in a muffin tray, pour in mixture until they are about 2/3 full
  • 4. back in oven at 190c for 20 minutes or until golden. While cupcakes are cooling, prepare frosting
  • Frosting
  • Beat together cream cheese and butter with an electric mixer. add icing sugar and coconut cream then gently mix until combined. Beat on high for 2 minutes until light and fluffy.
  • Toast coconut, under the grill for about 5 minutes, until golden.
  • put frosting on the tops of cooled cupcakes. Sprinkle with toasted coconut, then place mini Easter eggs on top
