How to make it

  • As the old ballad goes, Fr. O’Brian sneaked up into the belfry one Easter morning to knock back a few shorts before the service. As he got into his work he lost track of the time. Someone rang the bell and tossed him headlong .
  • The drink is reminiscent of the fallen father (the splatch of cream) lying in a pool of blood and booze – But don’t think about that just drink. The mint is there just for the taste.

  • Remove the stones from the cherries and crush them. Put them and the booze into a non-metallic container and let macerate for 2-3 days.
  • Strain well, and be triple sure to squeeze out every precious drop.
  • Beat the cream until it is somewhere between loose and firm – Sweeten it with the sugar.
  • Bruise the mint and put it into the shaker with some ice, a little grenadine and some of the booze shake well and serve in a highball glass with a touch of the cream in the centre.
