Chicken Stroganoff

- 1/4 c flour shopping list
- 1/2 tsp paprika ( I used hungarian ) shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 1 lb boneless chicken cut into strips ( 454 g ) shopping list
- 2 tbsp oil shopping list
- 2 cups sliced mushrooms shopping list
- 1.5 cups chopped onion shopping list
- 1 cup chicken stock shopping list
- 3 tbsp dry sherry ( I used chardonnay ) shopping list
- 1 tsp Dijon mustard shopping list
- 1 tsp soy sauce shopping list
- 1/2 cup sour cream shopping list
- 1/2 tsp dried dillweed shopping list
How to make it
- Combine 1st 4 ingredients in a resealable bag. Add chicken and toss to coat. Remove chicken & discard any excess flour mixture. I just mixed up the flour mix on a plate and coated the chicken this way.
- Heat oil in a large pot on the stove on medium high. Add chicken. Cook uncovered for 5 minutes. Stir occassionally until chicken is browned.
- Add mushrooms & onions. Cook for 5-10 minutes, scraping any brown bits from the bottom of the pan. Reduce heat and simmer partially covered for about 10 minutes. Stir occassionally until thickened.
- Remove from stove top and add in sour cream & dill. Stir.
- Makes about 4 cups.
- I served this over brown rice and it was delicious!
