Fried Oyster Po-boy

- THE Oysters: shopping list
- 24 to 36 oysters, raw shopping list
- 2 eggs, beaten shopping list
- 2 cups cornmeal shopping list
- 1 teaspoon sugar shopping list
- 2 teaspoons salt shopping list
- 1 teaspoon pepper shopping list
- 2 tablespoons flour shopping list
- 2 - 12 inch soft crusted bread loaves (Cuban or french will work shopping list
- cut into small 6 inch sub rolls to make 4 servings shopping list
- Chipotle mayonnaise shopping list
- (May Use Store Bought ( But My Recipe is Below) shopping list
How to make it
- THE Oysters:
- Drain oysters. In a bowl, beat eggs; add drained oysters and let stand for 10 minutes. Mix cornmeal, sugar, salt, pepper and flour. Dip oysters in cornmeal mixture and fry in batches in deep hot oil or shortening -- at about 370° -- until golden brown. Drain on paper towels.
- Spread the cut side of bread halves with Chipotle Mayonnaise. Fill sandwich with fried oysters and lettuce, pressing gently to close.

- Chipotle Mayonnaise:
- 1/2 cup mayonnaise
- 1 1/4 teaspoons canned chipotle chiles in adobo sauce, minced
- 1/2 teaspoon fresh lemon juice

- A Good Tartar Sauce is Great With This Too...
- I Usually Just Mix About 1/2 cup of mayonaise with 1 teaspoon horseradish and 1 teaspoon relishand a liitle lemon juice and it's great.
