Ginger Pineapple Meatballs

- 1 large egg, fork-beaten shopping list
- 1/2 c dry breadcrumbs shopping list
- 1/4 c finely chopped red capsicum or bell pepper shopping list
- 1/4 c grated onion ( I use grated carrot & zucchini instead of onion & red pepper ) shopping list
- 1/2 tsp ground ginger shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 454 g lean chicken mince ( I use turkey or chicken ) shopping list
- Can of crushed pineapple ( I use pineapple pieces ) 398 ml shopping list
- 1/2 c sweet chili sauce shopping list
- 1 tbsp lime juice shopping list
- 1/2 tsp ground ginger shopping list
- 1/4 tsp salt shopping list
- 1 tbsp soy sauce shopping list
- 2 tsp cornflour shopping list
How to make it
- Combine first 7 ingredients in a bowl. Add chicken ( or turkey ). Mix well and roll into balls.
- Heat oil in a fry pan ( I use a wok ) on medium heat. Add meatballs and cook for 5-10 minutes, turning often. Transfer to a plate lined with paper towel. Set aside.
- Add next 5 ingredients to the same pan. Stir soy sauce into cornflour in a small cup. Add to pineapple mixture. Heat & stir until boiling and slightly thickened. Add meatballs. Stir until coated. Reduce heat to low or med low and cook for about 5 minutes ( I cook a little longer ).
- Enjoy! Serve with jasmine rice ( we use brown rice ).
