Ingredients

How to make it

  • Preheat oven to 400°F, 200°C, fan 180°C, Gas 6
  • Place chicken breasts into a prepared buttered baking dish.
  • NOTE: I like to place carrots, parsnips and small onions around the chicken.
  • Mix together maple syrup, melted butter, almonds, lemon juice and lemon rind.
  • Pour evenly over the chicken.
  • Lightly season with freshly ground black pepper.
  • Bake chicken in a preheated oven for 50-60 minutes basting the chicken with the sauce regularly.
  • If the maple syrup starts to dry out too much, just add more maple syrup during cooking.
  • NOTE: Be very cautious while basting because the syrup has a tendency to spit when hot, causing a nasty burn.
