Sweet Maple Chicken

- 4 chicken breasts or 6-8 thighs, skinless and boneless shopping list
- NOTE: I prefer the skin on the chicken. shopping list
- 1 cup maple syrup shopping list
- 3 Tbsp. butter, melted shopping list
- 1/4 cup almonds, slivered(optional) shopping list
- 3 tsp. lemon juice, freshly squeezed shopping list
- 1 tsp. lemon rind, grated shopping list
- freshly ground black pepper shopping list
- NOTE: When I prepare this recipe for myself and anyone who does not have food sensitivities, I add minced fresh garlic/garlic powder and a dash of hot sauce. shopping list
How to make it
- Preheat oven to 400°F, 200°C, fan 180°C, Gas 6
- Place chicken breasts into a prepared buttered baking dish.
- NOTE: I like to place carrots, parsnips and small onions around the chicken.
- Mix together maple syrup, melted butter, almonds, lemon juice and lemon rind.
- Pour evenly over the chicken.
- Lightly season with freshly ground black pepper.
- Bake chicken in a preheated oven for 50-60 minutes basting the chicken with the sauce regularly.
- If the maple syrup starts to dry out too much, just add more maple syrup during cooking.
- NOTE: Be very cautious while basting because the syrup has a tendency to spit when hot, causing a nasty burn.
