  • STIR IN RICE AND ORZO COOK UNTIL BROWN AND CHALKY
  • STIR IN WARM STOCK , COVER AND BRING TO A BOIL,
  • REDUCE HEAT TO LOW AND COOK UNTIL RICE IS COOKED AND VERY TENDER AND ALL THE LIQUID IS ABSORBED ABOUT 40 OR 50 MINUTES
  • ADD SPICES AND PINENUTS STIR WELL.
  • LET STAND FOR 10 MINUTE TO ALLOW FLAVORS TO DEVELOP.

  • ( YOU CAN LEAVE OUT THE GREEN ONION AND USE SHALLOTS INSTEAD, AND INSTEAD OF CHICKEN STOCK YOU CAN USE BEEF STOCK
