Fresh Lime Cookies

- 1 C. granulated sugar shopping list
- 1 C. confectioners sugar shopping list
- ¾ C. vegetable oil shopping list
- ¼ C. lemon or lime juice shopping list
- 4 T. butter shopping list
- 2 large eggs, lightly beaten shopping list
- 1 t. vanilla extract shopping list
- 1 ¼ t. salt shopping list
- 1 t. baking soda shopping list
- 1 t. cream of tartar shopping list
- 4 C. all purpose flour shopping list
- frosting shopping list
- 1 ½ C. Confectioners sugar shopping list
- zest of 5 limes, grated shopping list
- lime juice for proper consistency shopping list
- 2 T butter shopping list
- 3 T cream cheese shopping list
How to make it
- With rack in the middle of the oven, preheat at 375 degrees.
- Mix together sugars in a large bowl.
- Cut in butter. Mix in other ingredients to flour.
- Add flour and stir until dough forms. It will be a bit dry and crumbly.
- Form into level tablespoon balls, and place 2 inches apart on ungreased cookie sheet.
- Flatten slightly.
- Bake 8 minutes per batch till slightly golden on edges.
- Mix zest and confectioners sugar. Cut in butter. Add lime juice as needed and cream cheese. Mix till proper spreading consistency.
