Corn and Black Bean Salad

- 1/2 bag (16 oz) sweet corn shopping list
- 2 cans(14.5 oz. ea) fire- roasted diced tomatoes shopping list
- 1/2 c black beans from 15 oz. can,drained and rinsed shopping list
- 1/4 c chopped red onion shopping list
- 1/2 tsp coarse salt shopping list
- 3 Tbs chopped fresh cilantro shopping list
- 2 Tbs fresh lime juice shopping list
- 1 Tbs vegetable oil shopping list
- 1/2 tsp ground cumin shopping list
- 1/4 tsp pepper shopping list
- 1 clove garlic,finely chopped shopping list
- 1 avocado,pitted,peeled and chopped shopping list
How to make it
- Cook corn as directed on pkg. rinse with cold water;drain
- In large bowl, stir together corn and remaining ingredients except avocado. refrigerate until ready to serve,at least 1 hour. Stir in avocado just before serving.
- Special touch:Spoon salad into bibb lettuce leaves and garnish with fresh cilantro
