How to make it

  • In a large non-stick skillet over medium-high, heat olive oil.
  • Add potatoes and peppers, cook 4 minutes without stirring.
  • Stir in onion and cook 2 minutes longer.
  • Sprinkle with paprika, garlic powder, red pepper flakes, salt and pepper and cook until fragrant, about 1 minute.
  • Add tomatoes and tomato paste, bring to a bubble and cook until potatoes are tender - about 8-10 minutes - stirring occasionally.
  • Crack eggs into the tomato mixture and cook until set.
