Meringue Crunch Cookies

- 3 egg whites shopping list
- 1 cup of sugar shopping list
- pinch of salt shopping list
- 1 teaspoon of vanilla shopping list
- 1 1/2 cups of Cap'n Crunch peanut butter cereal (original flavor) shopping list
- 1/2 cup of chopped walnuts or pecans if that is your preferance shopping list
- 1/2 semi-sweet chocolate chips (mini are best) shopping list
- 1/2 cup of shredded coconut shopping list
How to make it
- Heat oven to 350 degrees.
- Beat egg whites til foamy. Gradually add the sugar and salt and continue beating until stiff.
- Add in vanilla and mix well.
- Add cereal, nuts, chips and coconut. Mix.
- Drop by teaspoon onto foil covered cookie sheets.
- Place in oven. Turn oven off and leave the cookies until the oven is cold, 4 to 6 hours. *Joyce would leave them overnight*
- Peel off the foil and store in air tight container.
