Meringue Crunch Cookies Recipe
A blast from my childhood. Step-mom Joyce made these all the time. We loved them because of the Crunch cereal flavor and semi-sweet chocolate no less!

Ingredients
  • 3 egg whites
  • 1 cup of sugar
  • pinch of salt
  • 1 teaspoon of vanilla
  • 1 1/2 cups of Cap'n Crunch peanut butter cereal (original flavor)
  • 1/2 cup of chopped walnuts or pecans if that is your preferance
  • 1/2 semi-sweet chocolate chips (mini are best)
  • 1/2 cup of shredded coconut

Directions
  1. Heat oven to 350 degrees.
  2. Beat egg whites til foamy. Gradually add the sugar and salt and continue beating until stiff.
  3. Add in vanilla and mix well.
  4. Add cereal, nuts, chips and coconut. Mix.
  5. Drop by teaspoon onto foil covered cookie sheets.
  6. Place in oven. Turn oven off and leave the cookies until the oven is cold, 4 to 6 hours. *Joyce would leave them overnight*
  7. Peel off the foil and store in air tight container.

I've bookmarked this one. I have a friend who is grieving over her dog who passed, and I thought these would be great to go into my " I CARE " basket I'm putting together. I'm glad I scanned through your recipes again.
