Black Bean And Beef Burgers

- 1 lb. of lean ground beef, 85% percent lean shopping list
- 1/2 cup of black bean dip, vegetarian lower in fat shopping list
- 2 tbsp of spicy catsup shopping list
- 1 tsp of grill seasoning shopping list
- 1 can of red enchilada sauce shopping list
- 1 cup of shredded cheddar cheese shopping list
- 1 ripe avocado, sliced shopping list
- 1 ripe tomato, sliced shopping list
- Queso Fresco, white crumbling melting Mexican cheese shopping list
- 4 toasted Corn Toastees or Texas Toast shopping list
- Non stick spray shopping list
How to make it
- Mix beef, bean dip, catsup and grill seasoning.
- Shape into patties.
- Spray pan with non-stick spray and brown beef/bean patties on both sides.
- Pour enchilada sauce over the burgers, cover and cook on low for 8-10 minutes. Keep flipping the burgers to coat in glaze and reduce the sauce with the meat juices.
- Top beef/bean patties with cheese. Cover and cook 2 minutes more
- Toast bread of choice.
- Put burger on top of toasted bread, spoon with glaze.
- Top with slices of tomato and avocado.
- Sprinkle with queso blanco fresco.
