Multi-bean Salad

- 1 can of yellow wax beans, drained shopping list
- 1 can of red kidney beans, drained and rinsed shopping list
- 1 can of green beans, drained shopping list
- 1 can of garbanzo beans, drained and rinsed shopping list
- 3/4 cup of minced celery, include some of the leafy tops shopping list
- 1/2 to 3/4 cup of red onion diced shopping list
- 2 cloves of garlic, minced shopping list
- 3-4 slices (size of a quarter) fresh ginger minced very fine shopping list
- 1/3 cup of red wine vinegar shopping list
- 1/4 cup of honey mustard shopping list
- 1 or 2 tsp of sugar shopping list
- 1/8 tsp of ground ginger shopping list
- 1/4 tsp of crushed red pepper flakes shopping list
- generous pinch of sea salt shopping list
- 1/2 cup of mild vegetable oil shopping list
How to make it
- Drain and chill the beans.
- Add the onion, celery, garlic and ginger.
- Whisk vinegar with honey mustard, add seasonings.
- Whisk oil to combine.
- Pour over veggie mix.
- Chill at least 2 hours.
