How to make it

  • Combine 1/4 cup of the brown sugar and the corn syrup into a small saucepan on low heat, stirring until smooth, about 2 minutes.
  • Spray the inside of side of a 6inch round ceramic casserole dish of a 4 cup souffle' dish. Pour half of the sugar sauce into the dish, set the remainder aside.
  • Melt the butter and the remaining 1/2 cup of brown sugar in a medium skillet (don't use nonstick). Remove from heat and let cool 10 minutes. Stir the eggs into the cooled butter mixture.
  • Combine the flour and salt in a large mixing bowl, make a well in the center and pour in the butter mixture, stir until combined, next pour over the sauce in the dish.
  • Bake until the top springs back when touched with a wooden spoon about 40-45 minutes. Run a knife around the edge to loosen the pudding, and carefully turn out onto a serving plate. Reheat the reserved sauce and pour on top of the pudding.
  • You really have to have a camp trailer for this recipe, but you could probably make it in a dutch oven in the ground with hot coals.
