How to make it

  • In a large pot saute olive oil, the cumin, the onion and garlic
  • Meanwhile, puree 1 1/2 cans black beans(undrained) in a blender or food processor. Use a little chicken broth if necessary.
  • Once onion and garlic are sauteed add the pureed beans.
  • Add the rest of the beans
  • Add 2 cups of salsa (or more if desired)
  • Cook on low for 25-30 minutes.
  • Squeeze in the juice of half a lime.
  • Let simmer for 5 more minutes then serve
  • Top with tortilla chips and cheese if desired
