Gingerbread Muffins

- 1/2 cup Hot Water shopping list
- 1/8 cup Light Butter shopping list
- 2 Large Egg Whites shopping list
- 1/4 cup Molasses shopping list
- 1/4 cup unpacked Brown Sugar shopping list
- 1 cup White Whole Wheat Flour ( in Canada Robin Hood Nutri Flour) shopping list
- 2 tsp Gingerbread Spice ( See Note On Spice at Bottom) shopping list
- 1 tsp Baking Soda shopping list
- 1/4 tsp Salt shopping list
- Spice Mix shopping list
- Yield 1 2/3 cup( store in airtight container) shopping list
- 1/2 cup ground Cinnamon shopping list
- 1/2 cup ground Ginger shopping list
- 1/4 cup ground Allspice shopping list
- 1/4 cup ground Nutmeg shopping list
- 1/8 cup ground Cloves shopping list
How to make it
- Preheat oven 350*
- Heat water add butter and let set until butter melts.
- Spray muffin tins and set aside.
- Beat egg whites frothy. Whisk in molasses beating well Last beat in water and butter mixture set aside.
- In another bowl combine dry ingredients combining well, making sure all lumps are out of brown sugar. Add liquids and beat well to get rid of any lumps. Batter will be soupy consistency don't worry. Spoon out evenly into muffin cups and again don't worry about lack of enough batter. These puppies will rise during baking and fill the cups.
- Serve with a dollop of Almost Fat Free Cool Whip. 2 Tbsp almost fat free Cool Whip does not change point value for all you Weight Watchers out there.
