How to make it

  • Preheat the oven to 350F, butter and flour baking tins.
  • Mix the dry ingredients together in a mixing bowl.
  • Add the room temperature butter, mixing it until crumbly. Add everything else and mix well until most of the lumps are out. If you have an electric mixer, you can use that too. Sadly, we didn't.
  • It might be better if you lightly beat the eggs before putting them in. I hear contradicting advice from different people. Some say it's better to work when all the ingredients are cold, some say never to mix oil and butter, everybody's an expert. But this was his recipe for the most part and it came out amazing. One thing I always do out of sheer habit is add the milk last.
  • *Reads this over* That made no sense. Just add the ingredients in whatever order you feel like and mix well after each addition. Simple enough? Good.
  • Divide the batter evenly between 2 pans. In our case, we had pans of different sizes so our cake looked like a bell! Whatever.
  • Bake at 350F for 30-40 minutes or until toothpick inserted in the center comes out clean. Let the cakes cool, ice with frosting, decorate if desired and enjoy!!
