"Sunday's Carrots" Loaf

- 1 cup rolled oats shopping list
- 1 cup whole wheat flour shopping list
- 1 tbsp baking powder shopping list
- 1/4 tsp salt shopping list
- 2 tsp cinnamon shopping list
- 1/2 tsp nutmeg shopping list
- 1/2 tsp ground ginger shopping list
- 1/4 cup ground flaxseed shopping list
- 1/4 cup hot water shopping list
- 1/3 cup brown sugar shopping list
- 1 cup coconut milk shopping list
- 1/2 cup pureed roasted carrots shopping list
- 2 tbsp pineapple jam shopping list
- 1 tbsp vanilla shopping list
- 1 large apple, peeled and diced shopping list
How to make it
- Preheat oven to 350F, grease a loaf pan.
- In a bowl, whisk together oats, flour, baking powder, salt, cinnamon, nutmeg and ginger. Set aside.
- In a large bowl, whisk together flaxseed and water, let stand 5 minutes.
- Add sugar, coconut milk, carrots, jam and vanilla. Stir until well blended.
- Add dry ingredients and mix in, then fold in the apple until just mixed - do not beat.
- Bake 55-60 minutes, until tests done.
- Cool in the pan 20 minutes before unmoulding onto a rack and cooling completely.
