Ice Cream Sodas Variations

peach ice cream Sodas Recipe by Emily Luchetti
- 1 1/4 pounds ripe peaches--peeled, pitted and sliced shopping list
- 1 1/2 cups seltzer or soda water shopping list
- 1/2 teaspoon fresh lemon juice shopping list
- About 1/4 cup sugar shopping list
- Pinch of salt shopping list
- 4 scoops of vanilla ice cream shopping list
- 1 cup fresh raspberries shopping list
- almond butter Tuiles, optional shopping list
- In a food processor, puree the peaches until smooth. shopping list
- In a bowl, combine the puree with 1 cup of the seltzer, the lemon juice and 1/4 cup of sugar; add more sugar if desired. Stir in the salt. shopping list
- Place 1 scoop of ice cream and 1/4 cup of raspberries into each of 4 tall glasses. Pour in the peach mixture, top with the remaining seltzer and serve with the almond butter Tuiles. shopping list

- Pour about an inch of selzer water into the bottom of a tall glass. shopping list
- Add a generous squirt of chocolate syrup, and stir it into the selzer water with the spoon until it is completely mixed. shopping list
- Add ice cream, and then pour selzer water over the ice cream until the glass is full, stirring to mix the selzer with the chocolate syrup. (Avoid stirring the ice cream into the liquid; concentrate on stirring the liquid at the bottom of the glass.) shopping list
- Add a generous dollop of whipped cream, and top the soda off with a cherry. shopping list
peach ice cream SODAS
- 6 very ripe peaches shopping list
- 1/2 c. peach or apricot nectar shopping list
- 4 lg. scoops vanilla or peach ice cream shopping list
- 1 c. heavy cream whipped with 2 tbsp. sugar or 1 tsp. vanilla extract shopping list
- Peel and pit peaches, cut into eighths. shopping list
- Distribute the slices evenly among 4 tall 12 ounce glasses. shopping list
- Add 2 tablespoons nectar to each glass and mash peaches lightly with a fork. shopping list
- Add 1 scoop of ice cream to each glass, add soda water or seltzer and stir lightly to mix. shopping list
- Top with a dollop of flavored whipped cream and serve. shopping list
How to make it
- Preparation time: 10 minutes. Serves: 1
BLACK & WHITE Ice Cream SODA
- 1/4 c. milk
- 3 tbsp. chocolate syrup
- Vanilla ice cream
- Chilled soda
- Chocolate curls
- In tall glass, pour milk.
- Top with syrup and a scoop of ice crema.
- Fill with soda water.
- Garnish with chocolate curls, whip cream, and a cherry.
COFFEE Ice Cream SODA
- 3 tbsp. Coffee Syrup, recipe follows
- 1/4 c. milk
- Vanilla ice cream
- Chilled soda water
- In tall glass, pour milk.
- Add syrup and a scoop of ice cream.
- Fill with soda water.
- Top with whip cream and a chocolate coffee bean
LEMON Ice Cream SODA
- 1/4 c. milk
- 2 tbsp. frozen lemonade concentrate
- Vanilla ice cream
- Chilled soda water
- In tall glass, pour milk and lemonade.
- Add a scoop of ice cream.
- Fill with soda water.
- Top with Whip Cream, drizzle with lemon syrup, and lemon slice.
FRUITY Ice Cream SODA
- 1 pkg. (10 oz.) sliced, sweetened frozen strawberries, raspberries or
- peaches, thawed, pureed
- 1/4 c. milk
- Vanilla ice cream
- Chilled soda water
- In tall glass, place fruit puree, milk and a scoop of ice cream.
- Fill with soda water.
- Garnish with whip cream, drizzle with chocolate or peach syrup, and topped with either a fanned strawberry or peach slice and a wafer cookie.
COFFEE SYRUP
- In saucepan, mix:
- 1 c. granulated sugar
- 1 c. light corn syrup
- 1 1/2 c. water
- Bring to a boil, stirring constantly. Remove from heat. Stir in 1/4 cup instant coffee and 1 teaspoon vanilla extract. Keep refrigerated.
