These cookies are so yummy. They are great to take to a pot luck or picnic, and my son loves it when he gets a package of them at college.

Ingredients
  • 1 Cup margarine
  • 1 Cup brown sugar packed
  • 2 eggs
  • 6 tablespoons honey
  • 1 teaspoon vanilla
  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 1 12oz package of semisweet chocolate chips

Directions
  1. Combine ingredients in this order. Combine the margarine and sugar with a mixer. Add eggs one at a time, 6 tablespoons of honey, and 1 teaspoon vanilla and blend until smooth. Slowly add the flour and the baking soda. Mix into a thick dough. Stir in the chocolate chips.
  2. Wrap in plastic wrap and chill for 2 hours.
  3. Preheat oven to 350
  4. Break off small pieces and roll into 1" balls. Flatten slightly and place on a nonstick cookie sheet.
  5. Bake 8 to 10 minutes.

I would suggest replacing the margarine with Olive Oil, honey and olive oil go soooo good together.
