Blackberry Nectarine Cobbler

- 1 cup / 250 ml sugar (I would add little more for sweeter dough) shopping list
- 1 tbs / 15 ml cornstarch shopping list
- 2 large nectarines, cut into 1/2-inch / 1-cm pieces (about 3 cups / 750 ml) shopping list
- 3 cups / 750 ml blackberries shopping list
- 1 1/2cups / 375 ml all-purpose flour shopping list
- 1 1/2tsp / 7ml baking powder shopping list
- 3/4 tsp / 4 ml salt shopping list
- 7 1/2 tbsp / 110 ml cold, unsalted butter, cut into pieces shopping list
- 3/4 cup / 175 ml milk shopping list
- 6 tbs / 90 ml sliced almonds shopping list
- whipped cream or vanilla ice cream if desired shopping list
How to make it
- Preheat oven to 400 degrees F / 200 degrees C. Butter a 13 x 9-inch (3.5 L) baking dish.
- In a bowl, stir together the sugar and cornstarch. Add the fruit and gently combine well. Spread the fruit mixture in the baking dish. In another bowl, whisk together the flour, baking powder, and salt.
- Add the cold butter (if it's not cold, it won't blend properly). Cut the mixture together with a pastry blender or two knives until it resembles coarse meal. Add the milk and stir until just combined.
- Drop the dough onto the fruit in the mounds, one or two per person. Sprinkle the almonds over the cobbler and bake in the middle of the oven for 20 minutes or until the top is golden. Serve with whipped cream or ice cream.
- Note: Consider tossing the fruit with lemon juice, adding sugar (to taste) and a tsp or so of vanilla extract. Simmer on stovetop until sugar dissolves. Nutmeg and Cinnamon are optional flavorings as well.
