How to make it

  • Rinse the greens well to remove any grit and dry well.
  • Remove and dice the tough stalks.
  • Slice the leaves into strips
  • Dice the bacon into lardons (little chunks)
  • In a large saute pan or wok saute the bacon over a medium high heat until almost cooked.
  • Add the onion and diced stalks and cook until translucent.
  • Add the garlic and saute until fragrant.
  • Add the mushrooms and worchestershire sauce cooking until almost done.
  • Add the leaves and stir well cooking until wilted.
  • Lower the heat to medium low.
  • Add the cream and cheese (I like parmesan or cheddar) stirring until well blended in the pan.
  • Continue cooking until the sauce thickens a little.
  • Salt and Pepper to taste.
