How to make it

  • ~For Corona~
  • Cover two sheets with baking paper,and draw three circles on the paper.
  • Beat egg whites,until stiff.
  • Gradually add the sugar,beating well after each addition.
  • Stir in the combined coconut and cornstarch.
  • Spread evenly over the circles.
  • Bake in a 300 degree oven for 15 minutes...or until firm.
  • Turn off the heat,and leave to cool in the oven with the door slightly open.
  • ~ For Solar Layer ~
  • Place the milk and sugar in saucepan over low heat,stir,until your sugar dissolves.
  • Remove from heat ,stir in the cream,and then let cool.
  • Stir in the mango puree.
  • Pour into a metal container and freeze until semifrozen.
  • Chop the mixture and beat until thick and creamy.
  • Lightly grease a round cake pan that will accommadate the meringue circle,line completely with baking paper.Spread some of the sun mixture evenly into the prepared pan,place one coconut meringue circle over,the spread with remainder mango mixture.Top with one corona circle,freeze.
  • ~ For Partial Eclipse Layer~
  • Pour the sugar and syrup in a pan with 1 cup of water,stir over medium heat until your sugar is dissolved,bring to a boil and cook for a couple of minutes.Remove from heat and cool down completely.
  • Put the black currants and lemon juice in a blender with half of the cooled syrup and mix into a thick puree...If you would like your could push the fruit through a sieve to puree,then mix with the lemon juice and syrup. Add the remaining syrup and creme de cassis (Good Stuff)mix well.
  • Pour into a metal container freeze until semifrozen.
  • Chop mixture and beat until thick and creamy.
  • Spread on your meringue coconut corona circle.Top with another,freeze.
  • ~ Total Eclipse ~
  • Stir the licorice,milk,and cream together in a saucepan,cream together over low heat until the licorice is soft and melting.
  • Press through a strainer to remove any lumps.
  • Add the sugar,stir until dissolve,then cool.
  • Tint a deeper color with food coloring.
  • Pour into metal container and freeze until firm.
  • Chop ,and beat until thick and creamy,then spread over.
  • Freeze until solid.
  • Turn out of pan,cut in circles.
