How to make it

  • Preheat oven to 200C/390F.
  • Grate cheese and weigh (I say 200g because that's how much a block of parmesan usually comes in here but however much you have just match the same weight of flour and butter).
  • Weigh and add sifted flour and butter and mix.
  • Roll out and cut out with cookie cutter (I like to use a fairly small one as these are best served bite sized.)
  • Transfer to baking sheet and cook for 10-15 minutes, they should be golden brown.
  • Put onto cooling rack until fully cool then serve or store.

    How long did it take your aunt to teach you this recipe? I tried to make something like this once and it didn't go to well... To make a long story short, I had to have new skin grown in a petri dish!! I am working my way up taking another crack at it, but I simply don't have the confidence yet. For the now i am sticking to a little more basic recipes like "Boiled Water, With Salt" or "Campbells Cream of Mushroom Soup"
