Mediterranean Garden Panini

For sandwhich
- 1 loaf foccacia, round or rectangle shopping list
- 1/2 cup olive oil, divided shopping list
- 6 oz jarred artichokes(marinated or in water, your choice), roughly chopped shopping list
- 2 cloves garlic, minced shopping list
- 1 medium bell pepper, sliced shopping list
- 1 medium red onion, sliced thin shopping list
- 1/4 cup chopped kalamata olives shopping list
- 1/4 cup chopped roasted red pepper or peppadews shopping list
- 2T chopped banana peppers(sweet or hot, to taste) shopping list
- 1 large or 2 small/medium ripe tomatoes, sliced shopping list
- about 2 cups fresh baby spinach shopping list
- 8 average sized fresh basil leaves shopping list
- 1/4 cup feta cheese, crumbled shopping list
- 8 slices from large, fresh mozzarella ball shopping list
- salt and pepper shopping list
For Dressing
- 6T olive oil, from above shopping list
- 1 clove garlic, minced shopping list
- 1 large basil leaf, crushed and bruised in fingers shopping list
- 2-3 oregano leaves, crushed and bruised in fingers shopping list
- 1T Dijon shopping list
- 3-4T red wine vinegar shopping list
- salt and pepper shopping list
How to make it
For Dressing
- In glass bowl or mortar, add garlic , salt, pepper and herbs to olive oil.
- With spoon or pestle, crush herbs, using salt to break up the herbs as it all combines with the oil.
- Add Dijon and black pepper and whisk briefly
- Slowly add vinegar, whisking constantly to combine.

For Sandwich
- In small skillet, saute garlic onion, bell pepper, and banana pepper(if using fresh) on medium low heat until just softened, about 5 minutes
- Remove from heat and set aside
- Cut foccacia into serving sizes, then slice each piece in half to create a top and bottom half.
- Brush insides of all pieces of bread with dressing
- Layer Mozzarella on each bottom half then add belle pepper and onion mixture, then tomato slices, then roasted red peppers, olives and artichokes
- On top halves, lay spinach and basil leaves in single layer, topping that with crumbled feta. See Photo
- Carefully place top and bottom halves together and immediately grill, panini style on panini grill, Foreman type grill, or cast iron grill pan with a weight to flatten sandwich as it cooks.(my choice)

Fantastic, as usual. I’m an obligate carnivore but I’ll make this strictly according to recipe, the first time. This is so Mediterranean you may need a passport to make it. A truly lovely combination, indeed, indeed. Do vegetarians eat cheese? So...more
