How to make it

  • For Dressing

  • In glass bowl or mortar, add garlic , salt, pepper and herbs to olive oil.
  • With spoon or pestle, crush herbs, using salt to break up the herbs as it all combines with the oil.
  • Add Dijon and black pepper and whisk briefly
  • Slowly add vinegar, whisking constantly to combine.

  • For Sandwich

  • In small skillet, saute garlic onion, bell pepper, and banana pepper(if using fresh) on medium low heat until just softened, about 5 minutes
  • Remove from heat and set aside
  • Cut foccacia into serving sizes, then slice each piece in half to create a top and bottom half.
  • Brush insides of all pieces of bread with dressing
  • Layer Mozzarella on each bottom half then add belle pepper and onion mixture, then tomato slices, then roasted red peppers, olives and artichokes
  • On top halves, lay spinach and basil leaves in single layer, topping that with crumbled feta. See Photo
  • Carefully place top and bottom halves together and immediately grill, panini style on panini grill, Foreman type grill, or cast iron grill pan with a weight to flatten sandwich as it cooks.(my choice)

    Fantastic, as usual. I’m an obligate carnivore but I’ll make this strictly according to recipe, the first time. This is so Mediterranean you may need a passport to make it. A truly lovely combination, indeed, indeed. Do vegetarians eat cheese? Sorry, I do not know one vegetarian; so no one here to ask. There must be one or two in Samoa but none I know of. Ah well, anyone who doesn’t like this combo is missing out big time. Now to go beat up on my grocer to hurry up with the mozzarella cheese he’s been promising for a month. Thanks for this Keni. RJ
