Tomato Basil Concasse

- 2 large tomatoes, seeded and chopped shopping list
- 2 teaspoons extra-virgin olive oil shopping list
- 1 teaspoon red-wine vinegar shopping list
- 1/3 cup finely chopped fresh basil leaves shopping list
- salt and pepper to taste shopping list
How to make it
- In a bowl combine well the tomatoes, the oil, the vinegar, and salt and pepper to taste and stir in the basil.
- The concassé may be made 2 hours in advance and kept covered and chilled.
