How to make it

  • NOTE:

  • I like to build my lasagna casseroles the day before I'm going to bake and serve them because it's easier to put together if the meat sauce has cooled to room temperature. This recipe makes two batches in 2-inch deep, 9-inch square pans (I use disposable aluminum cake pans). Each casserole serves 6. So you'll have one to eat now and one to freeze for later.
  • RECIPE:

  • Heat large electric skillet to 350-degrees. Add the ground chuck, sausage, and chopped onions. Cook 10 minutes breaking the meat up with a spoon as you fry. Add minced garlic and sliced mushrooms and cook another 10 minutes. Stir in remaining sauce ingredients, cover and simmer for 10 minutes more. Turn off the skillet, remove the lid, and allow to come to room temperature while you prepare the cheese spread layer.
  • In a food processor, blend together the three cheese spread ingredients. Allow to sit at room temperature while the meat sauce cools so it will be easier to spread when building your casseroles.
  • Cook 12 lasagna noodles according to package directions. Rinse in cold water and lay on tea towel until you're ready to put the casseroles together.
  • Layer your ingredients in baking dish as follows (see additional photos):
  • 1. Scant layer of meat sauce
  • 2. 3 lasagna noodles
  • 3. Cheese spread mixture
  • 4. Meat sauce
  • 5. Mozzarella slices
  • 6. 3 lasagna noodles
  • 7. Cheese spread mixture
  • 8. Meat sauce
  • 9. Shredded mozzarella
  • Sprinkle parmesan cheese over the top. Cover dish with foil. You can now refrigerate or freeze until ready to bake.
  • TO BAKE:
  • Bring covered casserole to room temperature. Preheat oven to 375-degrees. Place on cookie sheet and bake, covered, for 40 minutes. Remove foil. Place casserole under broiler for a few minutes until the top cheese layer is golden brown. Allow to cool for 10 minutes before serving.
