How to make it

  • Boil the potato in the jacket in water to cover in a saucepan until tender; drain. Peel and mash the potato in a bowl. Add the confectioners' sugar and mix to form a stiff mixture.
  • Roll into a rectangle on a work surface sprinkled with additional confectioners' sugar. Spread with peanut butter. Roll into a log to enclose the peanut butter; wrap with waxed paper. Chill until firm. Slice to serve.
