Maine's Famous Blueberry Cobbler

- 2 pint fresh blueberries shopping list
- 1/2 cup granulated sugar shopping list
- 2 tablespoons fresh lemon juice shopping list
- 2 teaspoons cornstarch shopping list
- 1/2 teaspoon ground cinnamon shopping list
- Topping: shopping list
- 3/4 cup all-purpose flour shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon ground cardamom shopping list
- 1/4 teaspoon salt shopping list
- 1/3 cup granulated sugar shopping list
- 3 tablespoons butter, softened shopping list
- 1 large egg shopping list
- 2 teaspoons vanilla extract shopping list
- 1/3 cup heavy cream shopping list
How to make it
- Preheat oven to 375 degrees F.
- In a saucepan, mix together blueberries, sugar and lemon juice. cook over medium heat until mixture boils.
- Stir cornstarch and cinnamon into blueberry mixture. Cook, stirring constantly, until thickened,2 minutes. Spoon berry mixture into a 9-inch round baking dish or pie pan.
- To prepare topping, mix together flour,baking powder, cardamom, and salt.
- Beat together sugar, butter, egg, and vanilla at medium speed until light and fluffy. At low speed, beat in flour mixture until combined. Beat in cream.
- Spoon topping over berry mixture. Bake cobbler until golden, 30 minutes.
- Transfer pan to a wire rack to cool slightly. dust cobbler with confectioners' sugar. Garnish with whipped cream and blueberries.
