How to make it

  • Preheat oven to 375 degrees F.
  • In a saucepan, mix together blueberries, sugar and lemon juice. cook over medium heat until mixture boils.
  • Stir cornstarch and cinnamon into blueberry mixture. Cook, stirring constantly, until thickened,2 minutes. Spoon berry mixture into a 9-inch round baking dish or pie pan.
  • To prepare topping, mix together flour,baking powder, cardamom, and salt.
  • Beat together sugar, butter, egg, and vanilla at medium speed until light and fluffy. At low speed, beat in flour mixture until combined. Beat in cream.
  • Spoon topping over berry mixture. Bake cobbler until golden, 30 minutes.
  • Transfer pan to a wire rack to cool slightly. dust cobbler with confectioners' sugar. Garnish with whipped cream and blueberries.
