How to make it

  • Rub corn with some olive oil and seasoning and grill till done
  • Also grill the bell pepper
  • Cool both
  • Remove the corn from the cob
  • peel pepper and dice
  • Grate the cheese
  • Fold in cheese and herbs into corn
  • Mix olive oil and lime juice
  • Stir all well
  • season if needed with salt, pepper etc
  • Serve at room temperature
  • If chilling, let come to room temperature again
