Italian Potato Salad

- 8 medium size potatoes (peeled and chopped into about 1 in. cubes) shopping list
- 2-3 medium tomatoes shopping list
- 1 cucumber shopping list
- 1 red onion shopping list
- 4 oz. extra virgin olive oil shopping list
- 1 oz red wine vinegar shopping list
- 1 Tablespoon oregano shopping list
- salt to taste (about 2 teaspoons) shopping list
How to make it
- Boil water in large pot and add the potatoes
- Boil potatoes for 8-10 min. (potatoes should still be firm) NOTE: Do not over cook
- Drain potatoes and place in large bowl to cool for about 30 min.
- Chop up tomatoes
- Slice cucumber and about 1/4 of the red onion
- Add ingredients to cooled potatoes
- Pour on the olive oil and vinegar
- Add the oregano and salt
- Mix well and serve
- The potatoes may absorb more liquid depending on the type of potatoes and how long they are cooked. To alter recipe the rule is 1 part vinegar to 4 parts olive oil.
