How to make it

  • Rinse the lentils.
  • Heat 1 tbs stock in medium pot.
  • Sauté onion in the vegetable stock over medium heat for 5 minutes stirring frequently, until translucent.
  • Add garlic, carrots, celery, and kale. Continue to sauté for another couple of minutes. Add curry/chilli powder and mix to bring out its flavor.
  • Add the lentils, stock and tomatoes. Bring to the boil, reduce heat to medium low, and simmer uncovered until lentils and vegetables are tender, about 30 minutes. Add coriander, then salt and pepper to taste.
  • Enjoy!! :)

    Recently I bought a 3# bag of green lentils. This will be a great recipe to help eat all of those. Can't wait to try.
