Ingredients

How to make it

  • Combine wine,stock,flour,dry mustard,and 1/4 teaspoon salt...set aside.
  • In frying pan melt 4 Tablespoons butter.
  • Add slices of bread,turn quickly to coat both sides with melted butter.
  • Cook over medium heat until golden brown on both sides...set aside and keep warm.
  • In frying pan melt the 1 Tablespoon of butter,cook and stir shallot until tender.
  • Add the mushrooms,cook stirring from time to time until all the liquid is cooked off.
  • Remove from heat,salt and pepper...set aside and keep warm.
  • In frying pan melt the remaining butter and oil.
  • Add breast halves.
  • Cook over medium low heat until well browned on both sides,but still moist in the center.
  • Remove from pan...set aside and keep warm.
  • Now...stir wine mixture into the cooking juices,cook and stir until hot,thick and bubbly.
  • Remove from heat...You thought I was going to say set aside and keep warm..did'nt ya'...well......Nope!...just add the parsley,for pretty.
  • Spread each toast slice with one fourth of the mushroom mixture.
  • Quickly...as if it was going to get away...you shot and and cooked that little tail...remember?
  • Slice each breast half into thin diagonal slices.
  • Arrange on top of the mushroom toast.
  • Drizzle about 2 Tablespoons wine sauce over each portion.
  • ~Now go hug your Grandad,he was a smart man...My Grandad never mixed words,and got his point across pretty plainly.As we were out hunting Sharptail Grouse eons ago,he spotted two Sharptails and pointed saying,"See there 'Joycie'...if it insists on keeping it's tail in the air,it's just asking to have it bagged and tagged" Looking me square in the eye and said, "Do you understand?"

  • That man casted a long shadow,and you never back-sassed him...so, sure enough...there were two tails in the air...BANG! BANG!!
  • They stayed for dinner.
  • Moral of the story: No matter how SHARP you think you are...always...I mean...ALWAYS...cover your TAIL...in any given situation...no matter what! ~
  • Just remember while hunting, don't go buckshot ballistic...it's really not all that much fun,having to find all that in the bird.
