How to make it

  • Preheat the oven to 375 F. Combine the flour, baking powder, and salt in a medium bowl.
  • Beat the butter and sugar in a mixer bowl at medium speed until light and fluffy.
  • Beat in the egg and vanilla.
  • With the mixer at low speed, beat in the dry ingredients just until
  • combined.
  • Stir in the coconut.
  • Drop the dough by level tablespoonfuls onto ungreased cookie sheets.
  • With the bottom of a glass dipped in flour, flatten each cookie to 1/4 inch thickness, then press with the back of a fork to form ridges.
  • Bake for 10 to 12 minutes, until the edges are golden.
  • Transfer to racks to cool.
