Roasted Vegie Pita

- one zuchinii cut into 1/2 inch coins shopping list
- one large carrot cut into large matchstick pieces shopping list
- 10 asparagus spears cut into 1/2 inch peaces shopping list
- 1 pkg of mushrooms, cleaned and cut into halves shopping list
- one large red onion cut into slide chunks shopping list
- 1 large red pepper cut into pieces (I like fairly large pieces shopping list
- olive oil to coat shopping list
- sea salt and fresh black pepper shopping list
- 4 whole grain pitas shopping list
- light vinaigrette shopping list
- crumbled fetta shopping list
- baby spinach shopping list
How to make it
- coat all cut and chopped veg with oilive oil and salt and pepper
- layer sparingly on large baking sheet
- cook at 450 degrees for ten minutes
- turn veg and cook for another 5 to 10 minutes till veg is carmelized
- steam pittas till soft. place baby spinach on bottom on pita
- fill pitas with veg mixture, sprinkle with fetta,fold and wrap in foil
- bake in 350 degree oven for 20 minutes...or till.pita is be crispy
- sprinkle with vinagrette before serving
