How to make it

  • coat all cut and chopped veg with oilive oil and salt and pepper
  • layer sparingly on large baking sheet
  • cook at 450 degrees for ten minutes
  • turn veg and cook for another 5 to 10 minutes till veg is carmelized
  • steam pittas till soft. place baby spinach on bottom on pita
  • fill pitas with veg mixture, sprinkle with fetta,fold and wrap in foil
  • bake in 350 degree oven for 20 minutes...or till.pita is be crispy
  • sprinkle with vinagrette before serving
