Chocolate-espresso Cereal Bars With Cinnamon-chocolate Glaze

- For the Bars: shopping list
- 1/4 cup butter shopping list
- 2 oz. semi-sweet chocolate, chopped shopping list
- 3 cups miniature marshmallows shopping list
- 1/2 tsp instant espresso powder shopping list
- 1/4 tsp cinnamon shopping list
- 4 cups toasted oat cereal (ie: Cheerios - plain or multi-grain) shopping list
- For the Glaze: shopping list
- 2 oz. semi-sweet chocolate chocolate, chopped shopping list
- 1 tbsp. shortening shopping list
- 1/2 tsp. cinnamon shopping list
How to make it
- Bars:
- In saucepan, melt butter and chocolate; whisk in espresso powder and cinnamon. (This can also be done in a microwave)
- Add marshmallows and stir until melted (if microwaving, you may need to microwave in ten second increments to melt). Remove from heat
- Pour over cereal and stir until thoroughly coated. Press into a buttered 9" x 9" baking dish, pressing down firmly. (Rubber spatula works great, or just cover with a sheet of waxed paper and use your hands)
- Glaze:
- 2 oz. semi-sweet chocolate, chopped
- 1 tbsp. shortening
- 1/2 tsp cinnamon
- Melt chocolate and shortening, stirring until smooth. Stir in cinnamon.
- Drizzle over cereal bars. Regfrigerate until set. Cut into squares.
