Mexican Style Salad

- 2 16 oz. cans black beans,drained and rinsed shopping list
- 1-1/2 c fresh corn kernals or 10 oz pkg frozen corn,thawed shopping list
- 1 lg. red bell pepper,seeded and diced shopping list
- 1 c jicama,peeled and diced (if you can't find,tasty without it) shopping list
- 2 small fresh jalapeno peppers,seeded and minced shopping list
- 1/2 c firmly packed,chopped fresh cilantro shopping list
- 1/4 c lime juice(juice of 2 limes shopping list
- 2 TB vegetable oil shopping list
- 1-2 tsp salt shopping list
- 1/2 to 1 tsp pepper shopping list
- 1/2 tsp ground cumin shopping list
How to make it
- In large bowl,combine all ingredients and mix well. Cover and refrigerate for at least 1 hour or overnight. Serve cold or at room temperature.
