Nan's Jalapeno Chili

chili Ingredients
- 2-1/2 lbs. ground chuck shopping list
- 2 large yellow onions, chopped medium shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon cayen pepper shopping list
- 6 cloves garlic, minced shopping list
- 1/2 cup minced jalapenos (the kind that come sliced in a jar) shopping list
- 46 oz. bottle spicy vegetable juice cocktail (i.e., V-8) shopping list
- 2/3 cup dried beans (I mix half red, half pinto) shopping list
Toppings (per your own taste)
- cheddar cheese cubes shopping list
- Finely minced onions shopping list
- Sliced jalapenos (the kind that come sliced in a jar) shopping list
How to make it
- In a large soup pot, brown the ground beef with the onions. Spoon off excess fat. Add the salt, pepper, jalapenos, and vegetable juice. Bring to a boil and stir in the dried beans. Reduce heat to medium-low, cover and simmer until the beans are tender. Ladle into bowls and add toppings as desired. I like to add the cheese topping and let it get a little melty, then some raw minced onions, and scoop it up with crackers to eat. Yummy!
