Southern Tradition Special Corn

Corn lovers. My very own recipe made with McKenzie's frozen cream style corn! Absolutely wonderful! Always rave reviews. Great dish, especially with pork loin! Also a nice addition to a Mexican dinner.
Ingredients
- 1 package frozen McKenzie's corn (comes in a tube package) shopping list
- 1 cup self-rising buttermilk corn meal mix (Martha White is great!) shopping list
- 1 stick unsalted butter, melted shopping list
- 1/4 cup oil shopping list
- 3/4 cup Half and Half shopping list
- 3 eggs, slightly beaten shopping list
- 1 small can green chilies shopping list
- Sprinkle of paprika, added to top of casserole shopping list
How to make it
- Remove corn from package
- Place in a microwave friendly dish, defrost in microwave
- In large bowl, place remaining ingredients, except paprika
- With wire whisk, combine thoroughly
- Add defrosted corn to mixture, stirring to combine
- Pour into greased casserole
- Sprinkle with paprika
- Bake at 350 degrees until set and slightly brown
- This casserole may be baked in a 9 X 13 inch casserole or another dish or pan of equivalent size. Have baked it in a deeper dish and baked a little longer
