Lentil-walnut Burger

- 3/4 cup dry red lentils shopping list
- 1 1/2 cups water shopping list
- 2 tbsp. cider vinegar shopping list
- 1 tbsp. olive oil shopping list
- 1 cup finely minced onion shopping list
- 5 cloves garlic, minced shopping list
- about 10 large mushrooms, minced shopping list
- 1/2 cup walnuts, chopped fine shopping list
- sprinkling of salt shopping list
- 1/2 bag fresh spinach, chopped shopping list
- 1 tsp. dry mustard shopping list
- fresh ground black pepper, to taste shopping list
- 1/2 cup fine bread crumbs or wheat germ shopping list
How to make it
- Place lentils and water in a small saucepan and bring to a boil. Lower the heat and simmer, partially covered, for about 30 minutes, or until the lentils are soft and the liquid is gone. Transfer to a medium-sized bowl, add vinegar, and mash well.
- Heat oil in a medium sized fry-pan. Add onions and sauté over medium heat for about 5 minutes. Add all remaining ingredients, except bread crumbs or wheat germ and sauté 5 - 10 minutes or until all the vegetables are tender. Add the sauté and crumbs to the lentils and mix well. Form patties into burgers. Fry in a small amount of hot oil on both sides until heated through and crispy on the outside.
