Spicy Nacho Casserole

- 1 pound ground beef shopping list
- 1 large onion, chopped shopping list
- 1 large green pepper, chopped shopping list
- 1 28-ounce can diced tomatoes shopping list
- 1 16-ounce can hot chili beans (or regular beans in tomato sauce and add hot sauce) shopping list
- 1 12-ounce can kernel corn, drained shopping list
- 1 15-ounce can black beans, drained and rinsed shopping list
- 1 8-ounce can tomato sauce shopping list
- 1 envelope taco seasoning shopping list
- 1 13-ounce package spicy nacho tortilla chips shopping list
- 2 cups shredded cheddar cheese shopping list
How to make it
- Cook beef, onion and green pepper in a dutch oven until meat is no longer pink, and drain.
- Add tomatoes, beans, corn, tomato sauce and taco seasoning to the meat and bring to a boil. Reduce heat and simmer, uncovered, for 30 minutes. The mixture will stay thin.
- In a greased 9x13 baking dish, layer 5 cups of chips and 4 2/3 cups of meat mixture. Repeat layers.
- Top with 4 cups of chips and cheese.
- Bake, uncovered, at 350 F for 20-25 minutes until golden brown.
