Debb's Chayote Chicken Casserole (encore Appearance)

- 1 lb. boneless, skinless chicken breasts, pounded or cut thin shopping list
- 1/2 tsp aleppo pepper flakes (or crushed red pepper flakes) shopping list
- 1/2 tsp cumin shopping list
- 1/2 tsp Mexican oregano shopping list
- 1 TB olive oil shopping list
- 1/2 C chopped yellow onion shopping list
- 2 cloves of minced garlic shopping list
- 1 or 2 chayote squash, peeled and sliced shopping list
- zest of one lime shopping list
- juice of one lime shopping list
- 7 oz. roasted, chopped green chiles shopping list
- 2 medium tomatoes, chopped shopping list
- salt and pepper to taste shopping list
- 1/2 C reduced-fat, shredded mexican cheese blend shopping list
How to make it
- Preheat oven to 375. Sprinkle chicken with aleppo pepper, cumin and oregano and set aside. Heat olive oil in a dutch oven and saute onion and garlic till just tender. Add chayote slices, lime zest, & juice and saute/simmer a few minutes longer. Slide chicken pieces under the chayote/onion mixture, then top chayote with green chiles and tomatoes. Sprinkle with salt and pepper, cover and place in oven for 35 minutes. Remove from oven, sprinkle with cheese and return to oven, uncovered, five more minutes or until cheese is melted.
