How to make it

  • Preheat oven to 375. Sprinkle chicken with aleppo pepper, cumin and oregano and set aside. Heat olive oil in a dutch oven and saute onion and garlic till just tender. Add chayote slices, lime zest, & juice and saute/simmer a few minutes longer. Slide chicken pieces under the chayote/onion mixture, then top chayote with green chiles and tomatoes. Sprinkle with salt and pepper, cover and place in oven for 35 minutes. Remove from oven, sprinkle with cheese and return to oven, uncovered, five more minutes or until cheese is melted.
