Grilled Mustard Chicken With Fresh Corn Polenta

- For the chicken: shopping list
- 8 boneless skinless chicken thighs (you could use bone in, but take off th skin) shopping list
- 1/4 cup whole grain Dijon mustard (you could use a smokey garlic whole grain mustard, if you do, omit the garlic below) shopping list
- 1/4 cup regular Dijon mustard shopping list
- 1/8 cup honey shopping list
- 1 clove garlic, pressed shopping list
- 3 finely chopped green onions shopping list
- salt and freshly ground pepper shopping list
- For the polenta shopping list
- 5 cups water shopping list
- 1 cup polenta (coarse cornmeal) shopping list
- 1 teaspoon salt shopping list
- Kernels from 3 fresh corn cobs (the fresher the better, I picked mine from my garden, sweeeeet) shopping list
- 3 tablespoons butter shopping list
- Freshly ground pepper, to taste shopping list
How to make it
- Prepare the BBQ glaze (sauce): combine the mustards, honey, garlic and green onions, stir well to combine.
- Prepare the BBQ to medium: salt and pepper the thighs and place on the grill using the indirect method; cook , turning occasionally until the thighs are cooked through. When cooked, turn the flame on under the thighs (or move the chicken over the coals) baste with the sauce and cook turning and basting, until nicely glazed and browned (because of the honey, take care not to burn them). Hold in the oven until the polenta is made.
- Make the polenta: Bring the water to a boil, add salt. Slowly "rain" in the cornmeal, whisking or stirring as you do. Bring to a simmer, reduce the heat to medium low; simmer until polenta is tender, thick and creamy, stirring often; keep the polenta at a gentle simmer. When the polenta is ready, add the corn kernels, simmer for 3 - 5 minutes (depending on the tenderness of your corn). Stir in the butter; taste and adjust seasonings with salt and pepper.
- Place the polenta on a heated plate, place two thighs on top and serve.

I loved this recipe so much, I forgot to mention I did do a few changes. I wasn't grilling so I decided to mix the bbq sauce ingredients in my blender and give them a blitz and I used about 3/4 of that to marinade the chicken for about half the day....more
