New Potato, Greenbean And Tuna Salad

- 8 small new potatoes shopping list
- 1 large heirloom tomato or your preference shopping list
- 1 can of tuna packed in olive oil shopping list
- nice handful of baby greenbeans shopping list
- Dressing: shopping list
- 1/2 cup of good olive oil shopping list
- 2 tbl. spoons red wine vingar shopping list
- 5 or 6 anchovy fillets that were packed in oil shopping list
- 1 tsp. minced garlic shopping list
- salt and pepper to taste shopping list
How to make it
- boil potatoes until tender and set aside to cool
- boil fresh green beans about 3 minutes
- plunge into ice bath to cool and stop cooking
- drain canned tuna
- slice tomato into bite size pieces
- peel potatoes and cut into bite size pieces
- Dressing:
- Put the oil & vinegar in a jar with tight fitting lid
- put the anchovies, minced garlic and pinch of coarse salt
- into motor and pestle and make a paste (or just use a fork)
- add paste to oil & vinegar in jar, add fresh pepper.
- put lid on and shake until blended.
- Mix green beans with just enough dressing to lightly coat
- do the same with the potatoes.
- On cold salad plate arrange 1/2 the green beans, then 1/2 the potatoes
- surround with half the tomatoes and top with 1/2 of the tuna.
- Repeat with second salad plate. Dress to taste with remaning
- salad dressing.
- Also good with avocado, boiled eggs and salad greens.....
