How to make it

  • boil potatoes until tender and set aside to cool
  • boil fresh green beans about 3 minutes
  • plunge into ice bath to cool and stop cooking
  • drain canned tuna
  • slice tomato into bite size pieces
  • peel potatoes and cut into bite size pieces
  • Dressing:
  • Put the oil & vinegar in a jar with tight fitting lid
  • put the anchovies, minced garlic and pinch of coarse salt
  • into motor and pestle and make a paste (or just use a fork)
  • add paste to oil & vinegar in jar, add fresh pepper.
  • put lid on and shake until blended.
  • Mix green beans with just enough dressing to lightly coat
  • do the same with the potatoes.
  • On cold salad plate arrange 1/2 the green beans, then 1/2 the potatoes
  • surround with half the tomatoes and top with 1/2 of the tuna.
  • Repeat with second salad plate. Dress to taste with remaning
  • salad dressing.
  • Also good with avocado, boiled eggs and salad greens.....
