How to make it

  • In some olive oil, saute onions over med heat till soften.
  • Add the garlic and cook 30 seconds
  • add the stock, chickpeas, sweet potatoes, spices, tomatoes and cook coved about 10 minutes
  • Add the zucchini, yellow sqaush and cover and cook another 8 to minutes at a simmer
  • Meanwhile prepare the cuscous.
  • Serve the vegetables over or on the side of the couscus, garnish with chopped mint or parsley ( if too much liquid in the stew - just drain off )
  • Note: be careful not to overcook the vegetables ( except the tomatoes ) esp the sweet potatoes. Even tastes better when reheated and flavors blend well
