Moroccan Sweet Potato Stew

- 1 large onion coarse chopped shopping list
- 3 cloves garlic minced shopping list
- olive oil shopping list
- 3 large sweet potatoes shopping list
- 1 can chick peas drained and rinsed shopping list
- 1 small yellow squash cubed shopping list
- 1 small zucchini cubed shopping list
- 2 large fresh tomatoes diced shopping list
- 1/2 cup stock or as needed : vegetable or chicken shopping list
- cumin to taste shopping list
- allspice to taste shopping list
- a bit of cinnamon tot aste shopping list
- curry powder to taste shopping list
- salt and pepper to taste shopping list
- fresh mint leaves chopped shopping list
- cocuscus cooked shopping list
How to make it
- In some olive oil, saute onions over med heat till soften.
- Add the garlic and cook 30 seconds
- add the stock, chickpeas, sweet potatoes, spices, tomatoes and cook coved about 10 minutes
- Add the zucchini, yellow sqaush and cover and cook another 8 to minutes at a simmer
- Meanwhile prepare the cuscous.
- Serve the vegetables over or on the side of the couscus, garnish with chopped mint or parsley ( if too much liquid in the stew - just drain off )
- Note: be careful not to overcook the vegetables ( except the tomatoes ) esp the sweet potatoes. Even tastes better when reheated and flavors blend well
