Garlic Cashew Chicken

- 1 cup roasted salted cashews shopping list
- 6 tablespoons chopped cilantro including stems shopping list
- 1/4 cup olive oil shopping list
- 4 garlic cloves roughly chopped shopping list
- 2 tablespoons soy sauce shopping list
- 2 teaspoons brown sugar shopping list
- 2 jalapeño peppers sliced shopping list
- juice of one lime plus lime wedges for garnish shopping list
- 1 teaspoon kosher salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 3 pounds chicken thighs shopping list
How to make it
- In a blender or food processor blend together the cashews, cilantro, oil, garlic, soy sauce, brown sugar, jalapeño, lime juice and 2 tablespoons of water then blend until a smooth paste.
- Add salt and pepper the reserve one third of the marinade for serving with the chicken.
- Use the rest for coasting the chicken.
- Sprinkle salt and pepper all over the chicken pieces then coat with marinade.
- Chill for two hours then bring to room temperature before cooking.
- Preheat broiler or grill then broil or grill chicken turning frequently for 30 minutes.
- Serve with lime wedges, reserved marinade and cilantro.
