Garlic Cashew Chicken Recipe

Ingredients
  • 1 cup roasted salted cashews
  • 6 tablespoons chopped cilantro including stems
  • 1/4 cup olive oil
  • 4 garlic cloves roughly chopped
  • 2 tablespoons soy sauce
  • 2 teaspoons brown sugar
  • 2 jalapeño peppers sliced
  • Juice of one lime plus lime wedges for garnish
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 3 pounds chicken thighs

Directions
  1. In a blender or food processor blend together the cashews, cilantro, oil, garlic, soy sauce, brown sugar, jalapeño, lime juice and 2 tablespoons of water then blend until a smooth paste.
  2. Add salt and pepper the reserve one third of the marinade for serving with the chicken.
  3. Use the rest for coasting the chicken.
  4. Sprinkle salt and pepper all over the chicken pieces then coat with marinade.
  5. Chill for two hours then bring to room temperature before cooking.
  6. Preheat broiler or grill then broil or grill chicken turning frequently for 30 minutes.
  7. Serve with lime wedges, reserved marinade and cilantro.
