How to make it

  • Preheat oven to 350F and grease a loaf pan.
  • In a small bowl, whisk together flaxseed meal and hot water. Set aside.
  • In a large bowl cream together butter and sugar until fluffy.
  • Add syrup, molasses, yogurt, cinnamon and nutmeg, beating well, then blend in the soaked flaxseed mixture until well mixed.
  • Whisk together flour, tapioca flour, oats, salt, baking powder and baking soda in another bowl.
  • Add to the butter mixture, stirring in by hand.
  • Add apples and raisins, folding in.
  • Bake 1 hour, tenting with foil after 40 minutes.
